Melon, Tomato & Mozzarella Salad

I’m a firm believer in healthy eating every day – think less salt, more olive oil, reduced sugar, and steering clear of deep-frying whenever possible. 🥗✨ That’s why a bowl brimming with fresh veggies and fruits is my go-to for good health, and the best part? It doesn’t take much time to whip up!

There are those moments when I need a quick meal that doesn’t skimp on flavour, and that’s when salad pops into my mind. Starting a meal with a vibrant salad is a fabulous way to rev up your appetite! I adore all kinds of salads – not only do they fill me up, but they also ease my mind when I think I might have overindulged.

When it comes to making a delicious salad, the combination of flavours is key. That’s why I decided on a Melon, Tomatoes, Mozzarella & Lettuce Salad – a fantastic medley that’s as refreshing as it is colourful. Plus, it took me less than 15 minutes to prepare, leaving me more time to enjoy it!


Prep Time: 20 minutes

Cook Time: 30 minutes

Yield: 2 persons

Ingredients:

150ml lettuce

10 cherry tomatoes, halved

10 small buffalo mozzarella

10 Melon/cantaloupe balls

Dressing:

2 tbsp walnut oil

1 tsp balsamic vinegar

1 tsp dried mixed herbs

salt and pepper

Method:

1. Put the dressing ingredients in a jar with a tight lid on and shake to mix.

2. Divide equal portion of lettuce, cherry tomatoes, buffalo mozzarella and melon balls on individual plate and drizzle the dressing over. Serve at room temperature.
