Mom's Easy Fried Chicken
I’m back! It feels like ages since I last posted, doesn’t it? You’re probably thinking, How was the wedding? Well, let me tell you - it went brilliantly! And no, the weather gods didn’t let us down. Sure, there was a light drizzle before the ceremony, but that was it! The whole event unfolded beautifully on the beach, just as we’d planned. Now it’s a waiting game for the photos, which won’t be ready until June (cue the impatient tapping of fingers).
After a few bustling days, we headed to my hometown. Ah, the joy of being home! We were utterly spoilt, feasting on delicious food and soaking up precious family time. But there was no lounging around; we had to zip off to Langkawi a few days early to finalise wedding preparations. It was a flurry of meetings, checklists, and the kind of stress that makes your eye twitch.
Then came the Big Day, which flew by in a happy, blurry haze. Honestly, I barely had a moment to process it all. I’m counting on those wedding photos to help jog my memory!
After the wedding, we jetted off to Bali. It was wonderful to revisit this dreamy destination—and yes, I finally caught up with Ira! Thank you, Ira, for spending time with me. I’ll share more about Bali soon, complete with photos (and probably a lot of foodie moments).
Now that I’m back in London, the weather has been surprisingly warm—except the day we landed, of course. Typical! The jet lag is still lingering, but what’s really tugging at my heartstrings is how much I miss my family. The laughter, the long chats, and of course, the food.
And when it comes to food, nothing makes me more nostalgic than my mum’s cooking. Her Easy Fried Chicken is a family classic, and it’s so good that it deserves a spot in the fried chicken hall of fame.
Mum’s Easy Fried Chicken: A Crispy Slice of Childhood
When I was little, I’d hover around the kitchen while Mum fried the chicken. Let’s be honest—I wasn’t there to help. I was there to snag the crispiest pieces straight from the pan! Sure, my lips would burn a bit, but who cares when it tastes that good?
This recipe is my childhood in a bite. The key? Patience. Let those chicken pieces soak up all the goodness from the marinade. Trust me, it’s worth the wait. Better than KFC? 100%!

Cook Time: 30 minutes
Yield: 4 servings
Ingredients:
1 x 1.2kg whole chicken, cut into bite-sized
500ml sunflower oil
Marinate:
1 egg
2 tsp turmeric powde
1 tsp coriander powder
1 tsp cumin powder
1 tsp chili powder
1 tbsp oyster sauce
1 tbsp fish sauce
1/2 tbsp soya sauce
1/2 tbsp sugar
1 tbsp rice wine
2 tbsp custard powder
2 tbsp corn flour
2 tbsp rice flour
Method:
1. Put the cut chicken pieces in a mixing bowl. In a separate large bowl, add in all the marinate ingredients, stir to mix well. Then add the chicken pieces in the marinate, mix and make sure all are well coated. Cover with cling film and put in the fridge for at least 3 hours.
2. Remove the chicken from the fridge and leave to stand at room temperature for about 30 minutes before deep-frying. In a heavy-based saucepan or using wok, heat the sunflower oil until a small piece of bread turns brown in 15 seconds. Fry the chicken in batches for 10-15 minutes, or until the meat is cooked through and the skin is crispy. Don’t overcrowd the pan or wok as this will lover the temperature of the oil.
3. Remove the chicken with kitchen tongs and drain on kitchen paper or a wire cooking rack. Make sure the oil is still hot and continue with the remaining chicken. Serve warm.
