Moelleux Au Chocolat (Molten Chocolate Cake)

I’ll admit it – I’m absolutely obsessed with anything and everything related to the kitchen. Gadgets, tableware, glassware, pots, pans – you name it, I’m probably already in love with it! My kitchen is a treasure trove of delights, though I often get told off for my constant buying sprees. The funny part? Half the time, the things I swear are for everyday kitchen use end up as photo props. (Oops!) But hey, not everything becomes a prop! Sometimes, I do get things that are absolute essentials... or so I tell myself. 😉

Sure, every part of a house has its charm, but my kitchen? It’s got to be spotless, cosy, and, let’s face it, more than well-equipped (maybe even over-equipped, if I’m being honest!). One day, I dream of a bigger kitchen – fingers crossed!

A Kitchen Surprise: Moelleux au Chocolat 🎁

Let’s talk about those kitchen items that aren’t quite essentials but are oh-so-nice to have. For two consecutive Christmases, I received some fabulous kitchen gifts. One of them – a set of baking rings and a cookbook – sat patiently in my drawer for two years, waiting for its moment. Well, I finally gave it a go, and wow, what a delightful surprise!

The gift came in a lovely box, featuring a book titled “Moelleux & Coeurs Coulants” by Marabout, dedicated entirely to recipes for Moelleux au Chocolat, or as many know it, Molten Chocolate Cake.

My Love-Hate Relationship with Chocolate 🍫

Now, here’s the twist – I’m not a die-hard chocolate fan. Shocking, right? I’m a bit picky when it comes to chocolate. While I don’t go wild for every chocolate dessert, Moelleux au Chocolat is a clear exception. Its gooey centre, rich flavour, and heavenly texture make it irresistible. Given a choice between that and Chocolate Mousse? No contest. I’m all in for that molten magic! Are you with me?

I finally tried the most basic recipe from the book, and let me tell you – it was a game-changer. The result? A perfect, gooey-centred chocolate cake that’s as pretty as it is delicious. Watching that molten centre spill out is pure dessert bliss. With over 30 recipes in the book, I can’t wait to try the next one. Each variation promises to be just as tempting!

If you’re a chocolate lover (or even a selective one like me), Moelleux au Chocolat is a must-try. It’s rich, satisfying, and surprisingly easy to make. So, go ahead – indulge in a little kitchen magic and whip up this decadent dessert. Your taste buds will thank you!

Anyway, this fantastic book is called “Moelleux & Coeurs Coulants”, published by Marabout. There are more than 30 recipes! I tried only one of them and I’m loving it! I tried the very basic and easiest one which turned out really yummy, just how it was supposed to be – with a runny centre – oh, very tempting!!I t’s a great recipe as each cake turned out amazingly yummy and pretty! I am going to try other variations soon!


Prep Time: 20 minutes

Cook Time: 30 minutes

Yield: 4 servings


Ingredients:

2 eggs

50g brown sugar

1 tbsp flour

140g dark chocolate (70% of cacao), chunkily cut

110g butter, cubed

3 tbsp single cream


Method:

1. Preheat the oven at 200°C. Cut the baking paper big enough to put each around the inner side of the baking ring to avoid the cake sticking.

2. Mix the eggs and brown sugar, whisk until it becomes creamy and pale. Add the flour and continue to mix until combine.

3. Put the dark chocolate, butter and single cream in a heat-proof bowl. Bring water to a boil in a saucepan big enough for the bowl to sit on. Stir occasionally until the chocolate and butter are melted.

4. Pour in the chocolate mixture into the egg mixture, stir continuously until the the mixture is well combined and smooth.

5. Divide equal portion into each baking ring and bake in the oven for 7-8 minutes or until the cake is slightly spongy when touched.
