Get Your Jelly On – Day 29: Pepsi Jelly
I used to love buying the cola chewy soft candy and cola flavoured lollipop. That’s because I love drinking cola when I was little. After my posh chocolate brownie for my birthday, I made a dark dessert again, using Pepsi. As Halloween is just around the corner, I thought it fits in well with darker shade of desserts.
Tomorrow is the last day of the Royal Selangor – Get Your Jelly On– 30-day Challenge, looking back, I have devoted so much of my time in blogging and it’s one of the milestones in 2011. I can’t wait for tomorrow! In fact, I haven’t made anything for tomorrow, so, it’s going to be a test for me to see if what I have planned will be a success. Can you guess what I am going to make?
Pepsi Jelly

Ingredients:
For the Pepsi Jelly:
200ml pepsi
1.5 gelatine leaves
Method:
Put the pepsi in a saucepan and slowly bring to the boil. Meanwhile, soak the gelatine leaves in cold water until they become soggy. Squeeze out the water, add to the saucepan, stir to dissolve. Remove from the heat. Pour into the jelly mould. Set aside to cool before putting into the fridge to chill for 3-4 hours or until set.
